Nora Pouillon opened Restaurant Nora in 1979, but twenty years later, Nora did something outrageous — she became the first restaurant in the United States to be certified organic. Only three other restaurants since have achieved organic certification.

I caught up with Nora at her restaurant to get some tips on eating locally and organically.
